Experience the ultimate garden-to-glass journey where you'll harvest fresh herbs from our farm, and craft your own artisanal gin and tonic under the guidance of flavour scientist, Sam Ryo, and Pernod Ricard representative Tom Wood.

 

This event is a collaborative experience by Edible Garden City and Pernod Ricard, featuring the modern classic gin, Monkey 47, derived from 47 botanicals.

 

This workshop includes:

Part 1: Understanding Flavours with Sam Ryo – 30 min

Part 2: Guided Sensory Farm Experience – 30 min

Part 3: Build Your Own Farm Fresh Gin & Tonic (Free-flow) – 1 hour

Part 1 + 2: Understanding Flavours + Sensory Farm Experience
Think flavour is just taste? Think again! Discover the surprising truth about what flavour really is and why that morning coffee tastes so different when you have a stuffy nose. Enjoy a hands-on flavour workshop, guided by flavour scientist Sam Ryo. Learn the same definition that flavour scientists use and find out why understanding this difference will change how you experience every meal. It's simpler than you think, but more amazing than you'd imagine!

  • Unlock the hidden layers of flavour in everything you eat and drink
  • Taste with more awareness and appreciation using simple techniques used by sommeliers and scientists alike


This workshop includes guided hands-on tasting to hone our flavour perception, as well as a brief walk through Edible Garden City's Sensory Garden to taste, feel, smell and touch some of the locally-grown herbs that will might eventually flavour your Gin & Tonic concoctions!

Part 3: Build Your Own Farm Fresh Gin & Tonic
With your newfound understanding of flavour, taste freshly-harvested local herbs and edible flowers and have fun building your own Gin & Tonics using the 
beautifully botanical Monkey 47 Gin, under expert guidance from experienced Pernod Ricard representation, Tom Wood - free flow for endless creations! Sweet, sour, bitter and even salty - mix and match different elements for your own unique G&T; some add-ins might be classic (think limes or rosemary), while others might raise an eyebrow (or both) in a delightful way. Experiment as much as you like during the free-flow session.

Tom has over two decades of experience within the food & beverage industry, ranging from being a professional bartender at the Four Seasons Hotel Sydney to co-founding Tequila Mockingbird consultancy in Hong Kong. Tom now represents Pernod Ricard as Channel Sales Lead and focuses on selling premium brands in the Singapore market.

 

Flavour Scientist Profile: Sam Ryo
Sam is a flavour scientist whose work explores the intersection of taste, perception, and sustainability. Featured in The New York Times, Bloomberg, and The Atlantic, Sam is known for reverse-engineering iconic foods like whiskey, coffee, and chocolate—recreating them from natural ingredients in the lab to help build a more sustainable future. Through sensory education and scientific storytelling, Sam invites others to rethink how we experience flavor—and how it can shape the way we eat, farm, and innovate.
